Garlic Knots

 Garlic Knots.  A really great compliment to a hearty, garden bounty salad, to a pan of homemade lasagna, spaghetti or even just for a snack.  I use this fairly basic dough recipe:
Ingredients:
For the dough:
3 cups all purpose flour
2 tsp. instant yeast
1¼ tsp. salt
2 tbsp. olive oil
¼ cup milk
1 cup plus 2 tbsp. lukewarm water
 Glaze:
3T melted butter
2 cloves minced garlic
1 t italian seasoning mix
1T grated Parmesan Cheese 


First combine the yeast and the water.  Set aside to let that yeast bloom. Then using a stand mixer, mix all dry ingredients.  Slowly add the olive oil, milk and yeast/water.  Mix until a smooth ball of dough forms.  You want it to be smooth and elastic.  Roll the dough into a lightly oiled bowl and set aside in a warm, draft free place to let rise, about 1 hr. 
Once your dough has doubled in size your are going to divide it into about 10 equal pieces.  You will roll each piece into a snake about 6 inches long.  Then take your 'snake' and tie it into a knot and tuck the ends under.  There is a pretty good picture tutorial for making the knots, along with recipe, here.  Once you have your knots made, place them on a cookie sheet (lined with parchment paper) or baking stone to rise again, about 45 minutes. Pre heat the oven to 350.  To make the glaze, melt the butter and add the garlic, parmesan cheese and italian seasoning.  Brush over rolls.  Place in oven and bake for about 16 minutes, you want them to golden brown.
